Quinoa Patties

Tonight was a meatless meal night, and it included a new recipe. These quinoa patties weren’t a huge hit with my husband, but I thought they were good. I didn’t have any sour cream or other good sauce to top them with, and I felt like they were missing that. But anyhow, these protein packed little patties have a good meaty texture and remind me a little bit of crab or shrimp cakes.

what you’ll need:

  • 1 1/4 cup cooked quinoa, at room temperature
  • 2 large eggs, beaten
  • 1/4 tsp. sea salt
  • 1/4 cup chives
  • 1/4 cup grated Parmesan cheese
  • garlic powder
  • 1/2 cup seasoned bread crumbs (I used Italian)
  • 1 Tbsp.  butter

how you’ll do it:

cook your quinoa according to package (let cool if you have time)

in large bowl, beat eggs and mix in salt and quinoa

add all ingredients and mix together

with wet hands, shape mixture into small patties, about 2″ in diameter

melt butter in skillet and fill it with patties, turning after about 5 min. (when bottom is golden brown)
