Chewy Granola Bars

I made chocolate chip and oatmeal raisin chewy granola bars for snacks this week, and they are a BIG hit! I like making snacks like these myself because then I don’t have to feel bad for eating all of the things that I can’t pronounce on the box of the store-bought ones! Plus, mine are just better ๐Ÿ˜‰

what you’ll need:

  • 1 2/3 cups quick oats
  • 1/2 cup sugar
  • 1/3 cup wheat germ
  • 1/2 tsp. salt
  • 1 cup raisins (or chocolate chips)
  • 1 tsp. vanilla extract
  • 6 Tbsp. melted butter or “butter substitute”
  • 1/4 cup honey
  • 1 Tbsp. water

how you’ll do it:

preheat oven to 350*
soak your raisins in HOT water to make them plump
combine all dry ingredients (including raisins) in one bowl and all wet ingredients in another

pour wet ingredients into dry ingredients and mix well

pour mixture into a well greased 8×6 baking dish and press down until firmly in pan

bake for 30 minutes

let the bars cool for at least 30+ minutes before cutting, or they will fall apart
store in an air-tight container

I made 2 batches: chocolate chip and oatmeal raisin. I lined one pan with parchment paper and just sprayed the other. The advantage of the parchment paper is that it protected the bars from getting as brown or really crispy on the edges, but the ones without it didn’t fall apart. Just be sure to press the “dough” firmly into the pan so it sticks together well when it’s time to eat them. ๐Ÿ™‚
