Broccoli Quinoa Casserole

This is such a good recipe! Remember the last time I made quinoa and Ryan wasn’t a big fan? Well, nevertheless I decided to make it again in a different form. And boy did it turn out good this time! Ryan even said he liked it and he’d eat it again! How’s that for a 5-star rating?? Now don’t fear just because this recipe has quinoa in it. It’s like your classic broccoli and rice casserole, but better!

what you’ll need:

  • 1 can cream of broccoli soup
  • 1/3 cup mayo
  • 2 Tbsp. milk
  • 1 1/4 cup shredded cheddar
  • 2 tsp. sugar
  • black pepper, chives, Mrs. Dash, Nature’s Seasoning
  • 2 cups cooked broccoli
  • 1 1/2 cups cooked quinoa (3/4 cups dry quinoa, 1 1/2 cups water, dash of salt: bring to boil, then simmer about 20 min)
  • Parmesan cheese for topping

how you’ll do it:

preheat oven to 350*
mix together first 6 ingredients
add cooked quinoa
blend in broccoli
pour into greased 8×8 casserole dish and top with a bit of grated parmesan
bake for 30 minutes
