Honey-Lime Shrimp (and scallops)

I found this recipe on Pinterest the other day and just had to try it. I hope you enjoy it as much as we did!

what you’ll need:

  • 3/4 lb. shrimp (medium size)
  • 3/4 lb. scallops (mine were small)
  • 1/4 cup olive oil
  • 2 Tbsp. honey
  • juice of small lime (about 3 Tbsp.)
  • zest of one small lime
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes

how you’ll do it:

the original instructions say to mix all ingredients in gallon zip-lock bag, but I didn’t have one on hand so I used an 8×8 casserole dish
either way, marinade for 30-60 minutes (longer the better) mixing occasionally

once ready, place shrimp and scallops in a large skillet on medium to medium-high heat
(be sure you don’t have so many that they are on top of each other; you have to have room to brown)

turn over to brown the other side, and viola!

Serve with spicy corn with feta and lime and you have yourself one heck of a meal!;)

Please note, the less of the marinade you put in the skillet the better, otherwise the shrimp and scallops won’t really brown
