On the Menu: February 3

This week I’ve had a little more time to plan and acquire ingredients for our meals, so hopefully this won’t be such a fly-by-the-seat-of-my-pants for supper kind of week (although last week went pretty well)! I’m excited to try a few new recipes this week. The Recipe of the Week for this week is Enchilada Casserole (and if time allows, I’ll also be making Whole Wheat English Muffins!). How did you like the Strawberry Chocolate Chip Muffins from last week? 🙂

Super Bowl Party(!!) I took funfetti cake pops and peanut butter + chocolate chip cookie bites
Enchilada Casserole
Pasta-bake, roasted cauliflower, Caesar salad
Zucchini Corn Pancakes, hash-brown waffles, steamed broccoli
Loaded baked potatoes, asparagus, salad
