Raspberry Cheesecake Pie

Oh I am so glad that I made this for last week’s Recipe of the Week! This is definitely a go-to recipe for the next time you have to take dessert somewhere or are having company over. The original recipe tainted added chocolate to this pie, but I modified it and left it out (but if you are a chocolate lover to the core, please feel free to try it that way πŸ™‚ ). Although raspberries and chocolate often go together, there is no need for that here. Please try this one! πŸ™‚

what you’ll need:

  • premade 8″ graham cracker crust
  • 1 cup raspberries (I used frozen)
  • 1 14 oz. can sweet & condensed milk
  • 6 0z. cream cheese
  • 1 egg (or egg whites equivalent)
  • 3 Tbsp. lemon juice
  • 1 tsp. vanilla

how you’ll do it:

preheat oven to 350*
in a medium bowl, blend cream cheese and s&c milk

add egg, lemon juice, and vanilla. blend until there are no more lumps.

pour raspberries into the pie crust

pour cheesecake mixture over the raspberries

bake for 30-35 minutes, until just slightly golden brown on the edges
let cool, then chill in the fridge overnight.
