Baked smashed red potatoes w/rosemary

I love potatoes. In fact, they are my favorite food. All forms of potatoes-mashed, baked, twice baked, hash browns, fried, etc. This recipe succeeded in being another awesome and easy way to fix them!

what you’ll need:

  • small bag of small red-skinned potatoes
  • Pam non-stick olive oil spray (or olive oil)
  • salt, pepper, rosemary

how you’ll do it:

Preheat oven to 350*
Put your potatoes in a pot and cover with water. Boil until tender.
Cover cookie sheet with aluminum foil and spray liberally with Pam.
Drain water and put potatoes on cookie sheet.
Using whatever tool you have on hand, gently smash the potatoes. (I used the flat side of a meat tenderizer, but a potato masher would be ideal).

Liberally salt your potatoes, add a little pepper, and cover with rosemary.

Bake for about 20-25 minutes until golden brown.
